Reese’s Peanut Butter Cupcakes

These were for my friend Alex’s demo speech in public speaking titled “how to make cupcakes” As you all know by now, peanut butter is my kryptonite so I couldn’t resist helping with the task. I liked the use of Reese’s peanut butter instead of regular. I also have never used shortening so I now feel more open to it. These were fantastic. Hope you get an A on your speech Alex!

Reese’s Peanut Butter Cupcakes
Recipe from:Squidoo

1/3 cup vegetable shortening
1/3 cup Reeses Peanut Butter
1 and 1/4 cup dark brown sugar, packed
2 eggs
1 teaspoon vanilla
1 and 3/4 cup flour
1 and 3/4 teaspoon baking powder
1 teaspoon salt
1 cup of milk
1 can of vanilla or chocolate frosting
1 bag of mini Reese’s cups

-Preheat oven to 350 degrees; line a cupcake pan
-In a large mixing bowl, cream the shortening, Reese’s Peanut butter, and brown sugar together
-Add eggs, one at a time, beating well after each addition; Add vanilla
-In a small bowl, combine the flour, baking powder and salt
-Add to creamed mixture alternately with milk
-Fill cupcake tins 3/4 with batter
-Bake for 20-25 minutes or until a toothpick comes out clean
-When cupcakes are still warm, press a mini Reese’s cup into the center.
-When fully cooled, frost and garnish with more Mini Reese’s cups.
