Blueberry Crumb Bar

On a personal dessert kick currently. This blueberry crumb bar was tart, but sweet and satisfying. Eating it warm out of the oven was the best part. Watching the blueberries slowly bubble over through the oven door captivated me like a ten year old blowing up marshmallow peeps in the microwave (you all did it!) Will definitely make again, maybe even full size to share! Maybe.

Blueberry Crumb Bar (Single Serving)
Adapted From: Smitten Kitchen

1 tablespoon white sugar
1/8 teaspoon baking powder
3 and 1/2 tablespoons all-purpose flour
1 tablespoon cold unsalted butter
1 egg yolk
1 pinch of salt
1/4 teaspoon lemon juice
4 tablespoons fresh blueberries
1/2 tablespoon white sugar
1 and 1/2 teaspoons cornstarch
1 teaspoon lemon juice

-Preheat the oven to 375 degrees F, Grease a 4” circle can pan
-In a small bowl, stir together sugar, flour, and baking powder.
-Mix in salt and 1/4 teaspoon lemon juice .
-Use a fork to blend in the butter and egg. Dough will be crumbly.
-Press half of dough into the prepared pan.
-In another bowl, stir together the sugar, cornstarch and 1 teaspoon lemon juice. -Gently fold in the blueberries.
-Sprinkle the blueberry mixture evenly over the crust.
-Crumble remaining dough over the berry layer.
-Bake in preheated oven for 22 minutes, or until top is slightlygolden brown
-Serve warm
