Mini Whole Wheat Chocolate Chip Pizzooki

Pizzooki = Pizza + Cookie. The inspiration is the mouthwatering varieties at BJ’s Restaurant and Brewhouse. Mostly, I just wanted an individual dessert. Tonight, I didn’t want to make 485 cookies and attempt to give them away. I wanted one single serving just for ME. With such ingredients as egg white, whole wheat flour, and oats, these cookie’s really aren’t that terrible for you either!

Mini Whole Wheat Chocolate Chip Pizzooki
Adapted From: This Week For Dinner

1 tablespoon butter, softened
1 tablespoon sugar
1 and 1/2 tablespoon light brown sugar, packed
1 egg white
1/4 teaspoon vanilla
1/8 teaspoon baking soda
1 pinch baking powder
2 tablespoons whole wheat flour
3 and 1/4 tablespoons rolled oats
1 1/2 tablespoons mini chocolate chips
1 tablespoon chopped pecans
2 4” circle pans

-Preheat oven to 350 degrees
-Grease two 4” circle pans
-Combine all ingredients in a bowl
-Press dough into circle pans
-Bake for 6 minutes, cookies will look uncooked in the middle
-Let set for the 5 minutes
-Serve warm with Vanilla Frozen Yogurt or Low Fat Cool Whip
