Chocolate Cupcakes with Strawberry Frosting

These cupcakes were for my friend Callie’s 20th Birthday! We all got together at a park in town and had a little BBQ. Everyone was encouraged to bring food potluck style so I chose the main event – the cake!

Chocolate Cupcakes with Strawberry Frosting

2 cups
1-3/4 cups
all-purpose flour
3/4 cup HERSHEY’S Cocoa
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1 teaspoon salt
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water

1/2 cup whole frozen strawberries, thawed
1 cup (2 sticks) unsalted butter, firm and slightly cold
Pinch of coarse salt
3 1/2 cups confectioners’ sugar, sifted
1/2 teaspoon pure vanilla extract

For the Cake:
-Heat oven to 350°F. Line cupcake tin with liners
-Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl.
-Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes.
-Stir in boiling water (batter will be thin). Pour batter into prepared cupcake tins .
-Bake 25-30 minutes or until wooden pick inserted in center comes out clean.
-Cool completely

For the Frosting:
-Place strawberries in the bowl of a small food processor; process until pureed.
-With an electric mixer, beat together butter and salt on medium speed until light and fluffy.
-Reduce mixer speed and slowly add confectioners’ sugar; beat until well combined. -Add vanilla and 3 tablespoons (or to taste) of strawberry puree mix until just blended.
-Do not over-mix or frosting will incorporate too much air. Frosting consistency should be dense and creamy
-Spread over cupcakes

Notes: Normally, I go with the Food Network Devil’s Food cake when I make chocolate cake but I wanted to switch it up and try the Hershey’s Recipe. I think in the future I am going to stick with Food Network recipe. It uses butter instead of oil and that possibly made it more moist (I hate that word.) The strawberry frosting was great because well, you really can’t go wrong with fluffy sugar and butter. I would love to add some sort of strawberry extract to it next time to really pull that flavor. Strawberry + Chocolate is a great flavor combination and I was happy to make my own frosting for the first time! Happy Birthday Callie, hope you liked these!!
