These simple bars were really the product of boredom and wanting dessert but having nothing sweet in the apartment. I made them healthier by adding more applesauce and less honey however it came at the cost of the bars not sticking together all that great. Alas, the point was more for taste and nutritional value rather than presentation so I don’t really care. They were real good though, just like a oatmeal chocolate chip cookie but better for you!
Chocolate Chip + Raisin Granola Bars
3 1/2 cup rolled oats
1/2 cup packed brown sugar
1/2 teaspoon salt
1/2 cup honey
3 tablespoons vegetable oil
1/2 cup unsweetened applesauce
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips
1/2 cup raisins
-Preheat oven to 350 degrees
-In a large bowl, whisk oats, brown sugar, and salt. Set aside.
-In a medium bowl, mix honey, vegetable oil, applesauce and vanilla extract
-Pour wet mixture over oats and stir well, until all oats are moist.
-Fold in chocolate chips and raisins
-Evenly press oat mixture into prepared pan. Bake for 15 minutes or until golden brown
-Remove from oven and let cool completely. Using a sharp knife, cut into bars.
