I made these with my friend Andrea who used to work with me at the cupcake store! We used to work the 8 hour Sunday shift together and would discuss all the delicious goodies we wanted to bake. Now that our jobs are on hiatus because of the change in location of the store, we wanted to bake on our own together! A long time ago we both expressed our interest in making whoopie pies (pumpkin ones specifically as she shares my intense love of pumpkin) and decided to go with a red velvet variety in the spirit of valentines day coming up! They came out perfectly fluffy and I definitely want to make other varieties in the future!

Red Velvet Whoopie Pies

For the Whoopie Pies
2 cups  all-purpose flour
2 tablespoons unsweetened cocoa powder
1/2 teaspoons baking soda
1/4 teaspoon salt
1/2 cup butter, softened
1 cup packed brown sugar
1 egg
1  teaspoon vanilla
1/2  cup buttermilk
2 tablespoons red food coloring

For the Filling
8 ounces cream cheese, softened
3 cups powdered sugar
4 teaspoons vanilla extract

Directions:
-Preheat oven to 375 degrees F. Line baking sheets with parchment; set aside.
-In medium bowl combine flour, cocoa powder, baking soda, and salt; set aside.
-In large mixing bowl beat butter on medium to high 30 seconds.
-Beat in brown sugar until light and fluffy. Beat in egg and vanilla.
-Alternately add flour mixture and buttermilk, beating after each addition just until combined.
-Stir in food coloring.
-Drop heaping tablespoons of the dough onto the prepared baking sheets, about 1-inch apart.
-Bake 9 to 11 minutes, or until tops are set. Cool completely
-Remove cooled cookies from baking sheets and transfer to rack
-To make the cream filling, combine the cream cheese and powdered sugar until smooth. Add vanilla extract and beat until combined.
-With a frosting spatula or knife, spread the on one whoopie pie half and then sandwich the two halves together.

Note: At first attempt we made the cream cheese filling with fat free cream cheese and it DID NOT work. Do not try to cut corners with fat on these because it tasted like straight powdered sugar. We made a quick grocery store run to get regular cream cheese and it made all the difference. I figure you’re already eating a decadent dessert. Just go big or go home.
